Zucchini Patties with Goat Cheese, Arugula and Figs

Golden-brown fried zucchini rounds meet creamy fresh goat cheese, fresh figs, and aromatic arugula. The combination of savory and fruity flavors makes this dish a light treat for warm days.

Ingredients

1 Zucchini
1 pack fresh goat cheese rounds
3 figs
A handful pecans
1 pack arugula
olive oil for frying
2 tbsp olive oil for the dressing
1 tbsp sweet mustard for the dressing
Juice of 1/2 lemon for the dressing
A splash apple cider vinegar for the dressing
salt

Instructions

Step 1 of 7:

 

Slice the zucchini into thin strips with a vegetable peeler.

Step 2 of 7:

 

Place two zucchini strips crosswise on top of each other. Put a cream cheese round in the middle and fold the ends of the zucchini strips over the filling one after the other so that little parcels are formed.

Step 3 of 7:

 

Preheat the Ceratal® pan and drizzle with a little olive oil. Add the zucchini patties and fry on both sides for about 4–5 minutes each until golden brown and crispy.

Step 4 of 7:

 

For the dressing, mix olive oil, sweet mustard, lemon juice, apple cider vinegar, and salt.

Step 5 of 7:

 

Arrange the arugula on a plate and toss it with some of the dressing.

Step 6 of 7:

 

Slice the figs thinly. Arrange them on the arugula together with the crispy zucchini rounds.

Step 7 of 7:

 

Roughly crumble the pecans and sprinkle them over the top. Serve with the remaining dressing.
